These delicate oatmeal lace cookies are simple enough to make, yet delicious enough to let everyone assume you're a pro and spent six hours preparing them.
I must have the baking bug or something, because this is the third week in a row where I'm caving in for a little sweet treat. Luckily I bake my goods small, that way I can just grab one and then hide the rest in my freezer for another day. I love stacking them for presentation, and these cookies go great with coffee.
WHAT YOU NEED:
- a small pot
- 5 tbsp of butter
- 1/3 cup of rolled oats
- 1/2 cup of all-purpose flour
- 1/3 cup of sugar
- 2 tbsp light cream or milk
- 2 tbsp of light corn syrup or molasses
- 1/3 tsp of baking powder
1). Pre-heat convection oven to 350 degrees.
2). Melt the butter in a small saucepan or pot.
3). Add the remaining ingredients stirring constantly until everything is blended and until slightly thickened.
4). Spoon mounds onto a greased or parchment-lined baking sheet.
5). Bake on the center oven rack for about five minutes.
6). Let cool.
