I heart Swedish waffles. Maybe it's because I'm half Swedish. Maybe it's because I love pastries. But, it just so happens to also be Waffle Day! It's a tradition in Sweden and it celebrates spring. I couldn't be more thrilled. Because of today, I have the perfect excuse to make these yummy carb-loaded waffles, and celebrate the glorious weekend. Lucky for us, I added a small healthy twist to the otherwise plain recipe, so we don't have to feel too guilty in the process. Let's indulge a little, shall we?
WHAT YOU NEED:
- Waffle Maker (I recommend The Five Hearts by Chef's Choice).
- 1 stick of butter
- 1 tsp of baking powder
- A little less than 1/2 a cup of wheat germ
- A little less than 1/2 a cup of flax seeds
- A little less than 1/2 a cup of flour
- About 1.5 cups of milk
- A bowl and whisk
- Powdered sugar
1). Plug in your waffle maker, and let it warm up as you prepare your ingredients.
2). Melt the stick of butter in a small sauce pan. Use a low heat to ensure that you don't burn the butter. Once it's melted turn the heat off.
3). Use a small bowl to add all the dry ingredients first. Mix well.
4). Then add your milk to the bowl. Mix.
5). Lastly add the melted butter. Whisk well. A smooth batter should form.
6). Apply some cooking spray on both sides of the iron, to keep the waffles from sticking. Do this as needed (usually every round to be safe).
7). Pour a little bit of the batter in the iron and close. Don't overfill, as you don't want the waffles to become too thick or cause the batter to overflow (messy).
8). The waffle maker will 'ding' to let you know when it's done. Open the iron and place your waffle on a dish.
9). Continue steps 6-8 until the batter is used up.
10). Pour some delicious syrup or jam (really, this part is your choice).
11). Decorate with some powdered sugar.
