Step Up Your Pancake Game With A Delicious Swedish "Pie" Cake

Pancakes are amazing. Crepes are even better. But the best? Pie cake. Yes, pie cake. 

 

I grew up with pie cake in my life and this recipe is absolutely delicious. Everyone in my family loves it, and when I introduce it to friends, everyone is always blown away. It makes a great breakfast treat, or even lunch. The best part is that you can top it with whatever you like. We usually go the traditional Swedish way, which is a little bit of homemade strawberry sauce and some whipped cream. Here I decided to top my Pie Cake with a little American twist - classic maple syrup and bacon bits. You're not a true pancake fan until you've tried the Pie Cake. 

 

 

Thanks to my Mormor (which means Grandma in Swedish), you can have the secret recipe. Now it is time to give it a try. Easy and delicious. Bon appetite! 

 

WHAT YOU NEED:

- 1 cup of flour

- 2 cups of milk 

- 2 eggs

- 1/4 of a stick of butter

- a pinch of baking powder to give it extra fluff* optional

- a pinch of salt 

 

 

INSTRUCTIONS:

1. Put butter in a pie pan and place in oven as you pre-heat at 400 degrees F. Let the butter melt in the pan. Once it's melted remove from oven. Keep oven on.

2. Combine flour and milk first in a separate bowl. Whip. Then add egg and whip all together. 

3. Pour batter into pie pan with melted butter. Gently blend. 

4. Place in the oven and bake for about 20-30 minutes, until baked through and fluffy. 

5. Serve with strawberry jelly, homemade strawberry sauce, or maple syrup.
