When You're In The Mood For Italian, Make Spaghetti & Chicken Parmesan


I love Italian food. I feel like Italian cuisine offers something for everyone no matter your diet, food restrictions, or personal tastes. You can count on Italian food to make everyone happy, unless you just don't like Italian... But chances are, if you're reading this, you love Italian as much as I do.

In my day to day routine, I try to avoid excessive amounts of gluten, dairy, and/or sugars because of my inflammatory issues. But sometimes you have to live a little. And when I feel like having a big bowl of pasta, there is no looking back. A big bowl of pasta it is. Of course, if you strictly cannot consume gluten or dairy for example, there are safe (and just as yummy) alternatives to make your Italian dinner dreams a reality. Just do a little research to find out what works best for you!

Spaghetti is my favorite kind of pasta and I love to include it with a chicken parmesan. Here I made this dish using very few and simple ingredients; and like I say with every recipe I share, it's so easy to make. If you're going to indulge a little, because you might as well, make sure your ingredients are top notch. Quality is always key, because you are what you eat. I also believe in investing in useful kitchen products and equipment, such as those from Village Bakery, to make cooking feel less like work and more like an enjoyable experience. Because it should be. And whether you're a real Italian, or an Italian at heart, you know the food you make is an art form.

WHAT YOU NEED:

- Organic Chicken breasts

- Marinara sauce

- A bag of shredded mozzarella cheese

- 1-2 eggs (depending on how much chicken you have)

- Italian bread crumbs

- evoo

- spaghetti (or pasta of your choice)

- salt and pepper to taste

INSTRUCTIONS:

1). Heat large pan with olive oil. Coat chicken breasts with egg and then transfer chicken to coat with Italian bread crumbs.

2). Transfer chicken to warm pan with olive oil, and fry evenly on both sides until chicken is cooked through. Set aside

3). Boil water for pasta and prepare as instructed. Pre-heat oven to 350 degrees F.

4). Transfer chicken onto a baking tray. Pour marinara sauce and sprinkle mozzarella cheese on top of chicken as desired.

5). Bake for 15 minutes, or until cheese is melted through.

6). Serve with pasta of choice.
