Simple Pan-Fried Pork Chops Served With Cherry Tomatoes And Veggies


Fuel up with a hearty meal. Try this easy pan-fried pork chop dinner. This recipe takes less than 30 minutes, and the result is quite simply delicious. I'm basically obsessed with anything fried. I know, not necessarily a good thing... Fried foods are my guilty pleasures. I'm sorry, it's in my blood. I'm Scandinavian and I just can't help craving a Viking-style meal. But I try to be conscious of when I eat fried foods so that I'm eating them in moderation. I also always make sure to use good ingredients and healthy fats while preparing fried foods from home. So here you go my friends. I'll walk you through the steps to make this. Keep reading.

WHAT YOU NEED:

- A bag of baby potatoes (season them as you wish)

- Spinach

- Cherry tomatoes

- Pork chops (I bought mine from Trader Joe's. They came in a pack of two).

- Italian bread crumbs

- 2 eggs

- Extra Virgin Olive Oil

INSTRUCTIONS:

1). Boil your potatoes. When they're done, drain the water and add some olive oil and seasoning to the potatoes and stir them occasionally under low heat.

2). Pre-heat a separate pan with a little bit of olive oil while preparing the pork chops.

3). Coat pork chops in egg, then transfer them to the bread crumbs. Then place the chops on the pan to be fried. Let each side cook for about 5-7 minutes. Try not to flip them too much (from my experience, the chops cook better when you let them sit. Doing so, also avoids the bread crumbs from falling apart).

4). Remove chops from the pan, and transfer them to a baking sheet. Place in the oven at 350 degrees F and let the chops continue to cook through for about 10 minutes. This also makes the chops super crispy.

5). Grab your spinach and tomatoes, rinse them and prepare them in two separate dishes.

6). Serve!
