Silver Dollar Pigs In A Blanket


It's football season and what's better than a day of binge watching TV with incredible dips and appetizers? Lots of little cravings come to mind, but at the moment I'm in the mood for little pigs in a blanket. Sadly, I didn't have any puff pastry to use, so to make up for the fact, I whipped up some silver dollar pancakes. The result? Almost something that resembles a pancake taco!

I was imagining how cute it would be if I cut up the sausages, added some scrambled eggs, and a little bit of shredded cheddar cheese. This would be the definition of breakfast tacos! Ya, totally adorable. And tasty too. But for now, I'm stuck with the basics. What's good though is that you can basically do whatever you want with silver dollars. That's the beauty of football season. Make it interesting. Make it delicious.

WHAT YOU NEED:

For Silver Dollar Pancakes -

- 1 cup of all purpose flour

- 2 tbsp of granulated sugar

- 2 tsp of baking powder

- 2/3 cup of milk

- 1 egg

- 1 tsp vanilla extract

- 2 tbsp unsalted butter, melted

+ sausage

INSTRUCTIONS:

1). Heat sausage in the pan, cook then set aside.

2). Prepare the silver dollar pancakes. Mix all dry ingredients first then add wet. Mix well.

3). Pour small amount of pancake mix onto a warm buttered pan. Cook one side until bubbles form on the outer edges, then flip and cook on the other side. About 1-2 minutes each.

4). Set pancakes aside to cool. Wrap silver dollar around one sausage. Use a toothpick to hold together if you need.

5). Serve!
