Slow Cooked Pork With Sun Dried Tomatoes, Tossed With Tricolor Fusilli Pasta


You really can't go wrong with a hearty Italian home-cooked dinner. Just imagine a nice big bowl of comfort food after a long day of work... Yum!

When my days are busy, I like to bring out my slow cooker. This genius invention basically does the cooking for us. For this dish, all you need to do is about 2 minutes of prep work, then the slow cooker does everything else for you. Eight hours later, you have a mouth-watering dinner waiting for you. Not to mention, your home will be smelling divine.

Like I said, you really can't go wrong. If you're skeptical about leaving a slow cooker on for that many hours, don't be. I promise you have nothing to worry about. I was once a worry wart. But now I'm a firm believer. So let go of any hesitations and give this recipe a try!

I also came up with a great idea for all those left over hamburger buns from 4th of July. Turn them into garlic bread! I know, how genius of me. I include a quick how-to for the garlic bread below. It's very simple and works wonderfully with the slow cooker pork sauce.

WHAT YOU NEED:

- Slow cooker

- Pork (as many pieces as you wish)

- 1 package of sun dried tomatoes

- 1 tsp of EVOO

- 1 pack of chicken bouillon

- 2-3 garlic cloves (grated)

- 3/4 - 1 cup of almond milk

- Pasta of your choice (this recipe also works well with rice)*

INSTRUCTIONS:

1. Lightly brown both sides of pork on a frying pan with some olive oil. Then transfer pork into the slow cooker

2. Add remaining ingredients into the slow cooker.

3. Turn heat on LOW and cook for 8 hours / or 4-5 hours on HIGH.

4. After 8 hours, turn off slow cooker and pull apart pork into smaller pieces.

5. Boil pasta

6. Add pork and sauce to fresh pasta and stir.

7. Garnish your dish with salt, pepper, and parmesan cheese to taste.

GARLIC BREAD HOW-TO:

- Pre-heat convection oven to 375 degrees F.

- Cut your left over hamburger buns in half.

- Melt butter in a pan on low heat. Add Italian seasoning herbs and garlic powder to the butter.

- Dip the inside of the buns in the butter sauce.

- Lay all bread pieces flat with buttered side facing up.

- Sprinkle parmesan cheese over bread.

- Pop the bread pieces in the oven.

- Bake for about 7 minutes, or until bread turns into a golden color.

- Serve.
