Spaghetti Carbonara Is Actually Not Complicated To Make
I love keeping my dishes simple. That's the best way to go. All you need are 5 main ingredients: spaghetti, bacon, eggs, onion, and garlic. Of course, you'll also need water for boiling, milk or heavy cream (optional), olive oil, black pepper, and LOTS of parmesan cheese. Still, as a whole, this recipe is so simple. What is important here is technique and I will get into that more in just a bit. Side note: How cute are my spaghetti swirls? Oh, so fancy!
So without further ado, here is everything you need to know about making delicious spaghetti carbonara from scratch.
WHAT YOU NEED:
- 4 eggs
- 1 tbsp of milk or heavy cream *optional
- 3/4 of a yellow onion
- 4-5 garlic cloves
- 1 pack of bacon
- 1 small box of thin spaghetti
- EVOO
- freshly ground black pepper
- parmesan cheese (lots!)
INSTRUCTIONS:
1). Crack your eggs, add milk or heavy cream, and some black pepper and whisk away in a small bowl until all ingredients are blended. Put to the side.
2). Bring a large pot of water to boil.
3). In a separate large pan, pour olive oil. Then add garlic and onion (smooth - I recommend using a food processor to blend). Let the ingredients sizzle for a while. While this is taking place, add your pasta into the large pot of boiling water.
4). While the garlic and onion are cooking, cut up the bacon into small bits. Then add bacon to the garlic/onion mix. Cook for about 20 minutes or until bacon is cooked through and garlic/onion mix is mostly absorbed with the bacon.
5). Remove pan from heat. Take a small paper towel and dab at the pan to grab any excess fats.
6). Drain pasta (do not rinse) and immediately pour the pasta into the pan with the bacon. This step is crucial because the pan shouldn't be hot but the pasta is still super warm.
7). Once you pour the pasta into the pan with the bacon, immediately add egg mixture and stir until all ingredients are blended. This is what creates your "creamy" sauce. Let the egg cook from the heat of the pasta. Keep stirring and mixing for about 5 minutes.
8). Add parmesan cheese to the pasta and blend.
9). To create the spaghetti twirl towers as shown here, take a fork and a large spoon (like a salad spoon) and twirl away, then carefully transfer the pasta twirl from the spoon to the plate. Repeat as necessary. Garnish with a little bit of black pepper and more parmesan, and then serve!
